While the biscuits are baking, slice your strawberries. In a medium bowl, add the sugar and melted butter and stir to combine well. Sift together the dry ingredients: flour, baking powder, sugar, salt.
Set aside to marinate while you make the shortcakes.
To make the biscuits: Whisk together the dry ingredients, and work in the cold butter or shortening until the mixture is crumbly.
Place the remaining biscuit halves on top. ADD butter and pulse (or cut in with a pastry blender) until mixture resembles coarse crumbs. Marinate the strawberries: in a medium bowl, combine the strawberries, sugar, lemon zest, and salt.
